Description

Ingredients
  • 200 gram chow mein noodles (or any thin noodles)
  • 200 gram chicken breast, thinly sliced (optional)
  • 1 medium carrot, julienned
  • 1 bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1 cup cabbage, shredded
  • 2 cloves 2-3 garlic, minced
  • 2 green 2-3 onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1/2 tsp sugar
  • Salt and pepper to taste
  • 2 tbsp 2-3 vegetable oil for frying
Instructions
    Prepare the Noodles:
  1. Cook the chow mein noodles according to the package instructions. Drain and rinse under cold water to stop the cooking process. Drizzle a little sesame oil over the noodles and toss to prevent them from sticking together. Set aside.
  2. Cook the Chicken (Optional):
  3. Heat 1 tablespoon of vegetable oil in a large wok or frying pan over medium-high heat. Add the sliced chicken and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  4. Stir-Fry the Vegetables:
  5. In the same pan, add another tablespoon of oil. Add the minced garlic and sliced onions, and sauté for a minute until fragrant.
  6. Add the carrots, bell pepper, and cabbage. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
  7. Combine Everything:
  8. Add the cooked noodles and chicken back into the pan with the vegetables. Pour in the soy sauce, oyster sauce, hoisin sauce, and sugar. Toss everything together until the noodles are well coated and heated through.
  9. Adjust seasoning with salt and pepper to taste.
  10. Garnish and Serve:
  11. Garnish with chopped green onions and a drizzle of sesame oil. Serve hot, straight from the wok.
Note
  • Noodles: Use chow mein noodles if available, but any thin noodles like egg noodles or ramen can be used as a substitute.
  • Proteins: You can add other proteins like shrimp, beef, or tofu instead of chicken, or make it vegetarian by omitting the meat.
  • Vegetables: Feel free to add or substitute other vegetables like broccoli, snap peas, or mushrooms.
  • Sauces: Adjust the amount of soy sauce, oyster sauce, and hoisin sauce based on your taste preferences.
  • Heat: For a spicy kick, add some chili paste or crushed red pepper flakes.
