Description

Crack Chicken Noodle Soup is a creamy, comforting dish that combines the flavors of classic chicken noodle soup with the irresistible ingredients found in "crack chicken" (cheese, bacon, and ranch seasoning). It’s a hearty, flavorful soup that’s perfect for chilly days or when you need a cozy meal.

Ingredients
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts (or thighs)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups water
  • 2 cups egg noodles
  • 1 package ranch seasoning mix (1 oz)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup heavy cream or milk
  • 6 slices cooked bacon, crumbled
  • Salt and pepper to taste
  • Fresh parsley for garnish
Instructions
  1. Cook the Chicken

In a large pot, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides and fully cooked, about 6-7 minutes per side. Remove the chicken, shred it with two forks, and set it aside.

  2. Sauté the Vegetables

In the same pot, add the diced onion and garlic. Sauté for 3–4 minutes until the onion is translucent.

  3. Make the Soup Base

Add the chicken broth, water, and ranch seasoning mix to the pot. Stir to combine, then bring to a boil.

  4. Cook the Noodles

Add the egg noodles and cook according to the package instructions, usually about 6-8 minutes, until tender.

  5. Add the Chicken and Cheese

Reduce the heat to low, then stir in the shredded chicken, cheddar cheese, cream cheese, and heavy cream. Cook until the cheese is melted and the soup is creamy.

  6. Finish with Bacon

Stir in the crumbled bacon. Taste and adjust the seasoning with salt and pepper if needed.

  7. Serve

Ladle the soup into bowls, garnish with fresh parsley, and enjoy!

Note
  1. Chicken Options: You can use boneless, skinless chicken thighs for a richer flavor or substitute them with pre-cooked rotisserie chicken for convenience.
  2. Noodle Substitutes: For a low-carb version, replace egg noodles with zucchini noodles or cauliflower rice.
  3. Broth Choice: Use low-sodium chicken broth if you prefer to control the salt content.
  4. Bacon Shortcut: Save time by cooking bacon in the oven or using pre-cooked bacon bits.
  5. Thickening the Soup: If you prefer a thicker soup, reduce the amount of water or add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) before adding the cheese.
  6. Storage: The soup can be refrigerated for up to 3 days, but note that the noodles may absorb more liquid over time. Add extra broth when reheating, if needed.
  7. Customizable Spice Level: Add a pinch of red pepper flakes or a splash of hot sauce if you like a bit of heat.
