Ingredients
  • 500 Gram boneless chicken (cut into bite-sized pieces)
  • 2 tablespoons Schezwan sauce (store-bought or homemade)
  • 1 onion, finely chopped
  • 1 bell pepper, diced (optional)
  • 4 cloves 4-5 garlic, minced
  • 1 ginger,-inch minced
  • 2 green 2-3 chilies, slit
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon tomato ketchup
  • 1 tablespoon cornflour (cornstarch)
  • 2 tablespoons oil
  • Salt to taste
  • Spring onions for garnish
Instructions
  1. Marinate the Chicken
    • In a bowl, add the chicken pieces, 1 tablespoon of soy sauce, a pinch of salt, and 1 tablespoon of corn flour.
    • Mix well and let it marinate for 15-20 minutes.
  2. Prepare the Stir-Fry
    • Heat 2 tablespoons of oil in a large pan or wok over medium-high heat.
    • Add the marinated chicken and stir-fry until golden brown and cooked through. Remove the chicken from the pan and set it aside.
  3. Cook the Aromatics
    • In the same pan, add a bit more oil if needed.
    • Add minced garlic, ginger, and green chilies. Sauté until the garlic turns golden brown.
  4. Add Vegetables

    Add the chopped onion and diced bell pepper (if using). Stir-fry for a couple of minutes until they soften slightly.

  5. Add Sauces
      • Lower the heat and add the Schezwan sauce, remaining soy sauce, vinegar, and tomato ketchup.
      • Stir everything together until it is well combined.
  6. Combine and Cook
      • Add the cooked chicken back to the pan. Toss everything together to coat the chicken evenly with the sauce.
      • If the sauce is too thick, add a splash of water to adjust the consistency.
      • Cook for another 2-3 minutes to allow the flavors to meld.

      • Garnish with chopped spring onions.
