- In a large mixing bowl, combine chickpea flour, turmeric powder, red chili powder, carom seeds, asafoetida, and salt.
- Add 2 tablespoons of oil to the flour mixture and mix well.
- Gradually add water, a little at a time, and knead the mixture into a smooth, firm dough.
Prepare the Sev Machine
Grease the inside of a sev maker (a tool with small holes or a sev disc) with some oil. This will help the dough pass through easily.
Shape the Sev
- Divide the dough into portions and fill the pastry maker with one portion at a time.
- Heat oil in a deep frying pan over medium heat.
- Once the oil is hot, carefully press the sev maker over the oil, allowing the dough to pass through the holes and form thin strands directly into the oil.
Fry the Sev
- Fry the sev until it turns golden and crispy. Stir occasionally to ensure even frying.
- Remove the sev from the oil using a slotted spoon and place it on paper towels to drain excess oil.
